LOVE tacos? I know many people who would eat them every night if given the choice! Here’s an easy recipe to help change up the traditional taco recipe. It's also a great idea for using up leftover taco meat.
"Taco Pockets"

- Cooked and seasoned taco meat (ground beef, turkey or chicken with store-bought or homemade taco seasoning)
- Shredded cheddar cheese (or cheese of your choice)
- 1 can of 8-count refrigerated biscuits (you can substitute with pita bread or even Knishes!) Kosher Mexican!
- Salsa (optional)
- Avocado (optional)
Instructions:
- Separate the biscuits, then take each biscuit and separate into two (you will now have 16 biscuit pieces).
- Press one biscuit piece onto a cookie sheet making it as flat as you can but without tearing the dough.
- Top with a spoonful of seasoned meat and some cheese.
- Press the second half of the biscuit onto the top and seal the edges.
- Do this will all the biscuits making 8 filled biscuits.
- Bake at 450 for about 12-15 minutes. Check to make sure your bottoms do not burn as they cook faster on aluminum or glass. Cooking time may also vary depending on the temperature of your meat. If you are using leftovers straight from the refrigerator, you may need more time to ensure the meat is heated all the way through.
- Garnish with salsa and avocado on the side.
Serve to your taco-loving children, and remember....Never judge a taco by its shell!
