Have you ever had more coffee than you could handle in a day? Couldn't resist a deal through your local supermarket rewards program, offering a $6 grande beverage for only $2?! You know it would expire in a day or two therefore your order it, but it is well after 4pm. The time when "they" say you should stop drinking caffeinated beverages for the day in order to avoid late day/night jitters?
Well, on a recent visit to a supermarket which has (one of the famous but will remain nameless) coffee chains inside, I could not resist the deal and I ordered a Mocha Peppermint Iced Coffee. I love mint so I figured it would be a good combination and it did not disappoint. I think even after just a few sips, I was able to complete my shopping in under 7 minutes flat!
I controlled myself and did not drink it all. What should I do with it? I can't throw anything out but I simply couldn't/wouldn't drink any more coffee by that time...Think, think...YESSS- When live gives you too much mocha iced coffee, make mocha coffee ice pops for a caffeine lift on another hot day!
Here is my simple recipe to do just that: (This experiment yielded 4 small ice pop servings)
-Mocha Peppermint Coffee Ice Pops:
-Take the leftover iced coffee, strain out the ice
-Add the drink to popsicle molds and freeze for approximately 8 hours.
-Remove the molds and place the bottom in hot water for a few minutes to release the brand new, upcycled, iced coffee pops!
*Definitely an adult treat! Not recommended for children under 16. Make sure to keep separate/labeled as it may be hard to tell the difference between these unique mocha COFFEE pops and chocolate ice pops. It may come out with a swirled look of vanilla and chocolate. This is the mocha mixed with the coffee and whipped cream/milk. The peppermint will remain mainly in granule form and adds a minty crunch to this refreshened treat for EARLIER in the day, enjoy!
