Avocado Your Way: 2 Recipes Using a Favorite superFRUIT!

Avocado is a superfood! It's loaded with rich nutrients and vitamins. I personally use avocado in many different and unique recipes — from breakfast to dessert! 

Check out two of my favorite Avocado recipes:

Avocado Toast

Ingredients:

  • 1 tablespoon butter
  • 1 slice of sourdough or rye bread toasted
  • 1/2 ripened avocado, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon lemon juice
  • 1 teaspoon sesame seeds (optional but excellent for fiber, b complex vitamins and energy)

Directions:

  1. Toast bread.
  2. Spread butter on the toast
  3. Spread the avocado on the toast.
  4. Add salt, pepper, and sesame seeds. 
  5. Serve right away warm and enjoy!

Avocado Chocolate Frosting

Ingredients:

  • 1 avocado, ripened
  • 3/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1/4 cup confectioner's sugar
  • 1/2 cup chocolate chips

Directions:

  1. Add the first 4 ingredients to the food processor and pulse until combined.  
  2. Stir in the chocolate chips. You may need to scrape down the sides of the food processor and mix.
  3. Refrigerate for one hour and apply to cake or cupcakes.

This frosting will fool your kids into thinking they are having a non-healthy sweet treat!
